Abstract

Freshness estimation fishes out that easiest being done until currently is sensori estimation covers performance, color, flavour, and texture. Besides needed also laboratory
which is equal to and tool and material that don't be had by one any one, so along with technology developing is required a practical tool to detect fish freshness one easy way
and quick. That tool gets to get little tag abatamen form that resident deep pack. This smart tag can give information to consumer hits fish quality that packed by discoloration,
so consumer gets to know quality decrease fishes out that will be bought. Flesh processing industry a lot of develop method to evaluate freshness from product. One of it by features lapse date, but date of lapse can't inform storage fault. Smart packaging development as indicator of antosianin's color from red cabbage can monitor flesh quality if most tall temperature flat and at the moment storage. In extraction does this research cabbage
tingles to result antosianin ekstract that following is expected get as been utilized colour indicator film in shaped kitosan PVA film (Polivinil is Alcohol) with natural colouration from red cabbage. Ektract method that is utilized variation which is (1) Maserasi's Methods – Sonikasi; (2) Maserasi's Methods plain; (3) Poaching Methods; and (4) Poaching Method – Kopigmentasi.
