Abstract
Polyphenols are the phytochemical compounds contained in plants and powerful antioxidants, so this study
examines the extraction of polyphenols from mango seeds using ethanol as a solvent. The study applied the design of
Response Surface Methodology 3 variables, namely extraction time (h), ethanol concentration (%) and ethanol volume /
volume (mL). The results showed that the optimum conditions of the extraction process were 5.14 h, ethanol
concentration was 86.40% and the amount of ethanol was 245.81 mL, at the extraction condition, polyphenols were
extracted of 130.673. Mango seeds contain polyphenols in high concentrations. This study also provides information on
the effectiveness of ethanol as a solvent for extracting polyphenols, where the effect of ethanol is stronger in extracting
polyphenols than the effect of extraction time and ethanol concentration.
