Abstract

This study report a new method in the production of Virgin Coconut Oil (VCO). Chemical studies of
VCO production have been carried out using the maceration method by ethanol solvent accompanied
by stirring. Effect of extraction time (2, 3, 4, 5, 6 h), ratio of coconut to solvents (1: 3, 1: 4, 1: 5, 1: 6),
and ethanol concentration (66%, 76%, 86%, 96%) on the yield of VCO has been studied, as well as
analysis of some physicochemical properties of the VCO. The results showed that the best extraction
conditions were 4h, the ratio was 1: 5, and ethanol concentration of 86%, in this condition was
produced 23.79% of VCO. Some of the physicochemical properties analyzed included 0.037% of
moisture content, refractive index of 1.4486, density of 0.918 g / mL, free fatty acid content of 0.13%,
total acid of 0.42 mg KOH / g, peroxide number of 0.628 meq oxygen / kg, iodine number of 8.36 g I2 /
100 g oil, and saponification number of 209.24 mg KOH / g oil. The results of this study provide the
data of chemical production potential of VCO using ethanol solvents which are "green solvents”.
