Abstract

One method of making VCO is the acidification method with the addition of kitchen vinegar at pH 4 conditions. The VCO
product produced in this method cannot last long, only able to last 1 week. So that one of the efforts to maintain the quality
of VCO is purification by adding activated charcoal as an adsorbent. Purification was carried out using coconut shell
activated charcoal with various treatments, including variations in particle size, namely 125, 250, 425 and 500 m, particle
weight of 1, 2, 3, 4 and 5 g and contact time of VCO to activated charcoal, namely 0.5; 1; 1.5; 2 and 2.5 hours. After
obtaining optimal results from the purification process, it was continued with the VCO storage process for 1, 2, 3, 4, etc.
weeks. VCO is stored and analyzed every week based on the quality requirements of SNI 7381-2008 including water
content, free fatty acids, peroxide number and organoleptic tests (odor, taste and color). The best size, weight and contact time between VCO and coconut shell activated charcoal were 125 m, 4 g and 2 hours. 0.1333–0.24% and the peroxide value analysis is 0.3333–5.3333 mg oak/kg. VCO also produces a distinctive coconut odor, tasteless and clear in color which has met the quality requirements of SNI 7381-2008. Storage time affects the quality which in the 6th week of storage, VCO has been damaged.
