Abstract

As technology advances and human standards of living increase, the use of cooling machines will become more widespread. Indonesia is a tropical (hot) country, so many people need food that can help the body in carrying out daily activities. One of them is ice cream, but the problem is that the ice cream cooling machine that is already on the market today is too expensive to reach for the general public, and making ice cream takes a long time. Based on this, the prospect of ice cream business for now and in the future is quite promising, so it takes a new breakthrough in making fried ice cream processing using liquid nitrogen or commonly called LN2 (liquid nitrogen). With LN2 Ice cream can be made in minutes with a unique presentation concept and attract the attention of many culinary connoisseurs.
